Zuppa de Jimbo
  • 5 links/mild Italian sausage
  • Olive oil, 2 TBS
  • 1 onion, chopped
  • 4 garlic cloves, chopped
  • ½ cup chopped carrots
  • ¾ lb fresh spinach, roughly chopped
  • 1-2 cups French bread, cubed
  • 2 cups water
  • Crumbled Feta Cheese
  • Parsley, chopped, for garnish


    Open up all 5 links of sausage and discard casing.  Brown the meat in olive oil.  Add onion, garlic and carrots.  Cook for 20 minutes, until soft.

    Add the spinach and French bread, cook for about 1 minute.  Add the water.  Heat and stir.  Serve.

    Top with crumbled Feta and parsley.

Recipes for the Economic Depression

Jim's mom used to tell the tale of having to eat dandelion soup during the Great Depression. During these uncertain economic times, we wanted you to be prepared. Thanks to Alice for the recipe.

Cream of Dandelion Soup

 4 cups chopped dandelion leaves

2 cups dandelion flower petals

2 cups dandelion buds

1 Tbsp butter or olive oil

1 cup chopped wild leeks (or onions)

6 cloves garlic, minced

4 cups water

2 cups half-n-half or heavy cream

2 tsp salt

1.  Gently boil dandelion leaves in 6 cups water.  Pour off bitter water.  Boil gently a second time, pour off bitter water.

2.  In a heavy-bottom soup pot, sauté wild leeks and garlic in butter or olive oil until tender.

3.  Add 4 cups water.

4.  Add dandelion leaves, flower petals, buds, and salt.

5.  Simmer gently 45 minutes or so.

6.  Add cream and simmer a few minutes more.

Garnish with flower petals.

 

Philips Phile Surefire Birth Recipe
(Directions must be followed exactly)

  1. The pregnant mother MUST be past her due date.
  2. The father* of the unborn child MUST purchase a newbox of Kraft Macaroni & Cheese (the original elbows with the powdered cheese in the blue box), and a bottle of A-1 Steak Sauce.
  3. The father* MUST make the entire box of Mac. & Cheese while the mom-to-be sits on her fat ass.
  4. The mother can add as much or as little (the more, the better) A1 Steak Sauce to the Mac. & Cheese.
  5. The mother MUST eat as much of the Mac. & Cheese as she can, preferably the entire box.
  6. The proud father* should start packing the bags and warming up the car because mom will be in labor within 24 hours.
  7. Send us a picture of the rug-rat.
* Note: Any male figure will do if the father is in prison or in the witness protection program.
The surefire recipe is guaranteed to work, (at least 9 out of 10 times) And if it doesn't, it means YOU screwed it up!
Jim's Italian Gravy
Jim's Italian Gravy Ingredients:
1 can Plum Tomatoes (Progresso or Cento)
1 medium size onion
5 tablespoons butter
Red wine (optional)
Garlic (optional)
Fast Eddie's Italian Meat
1. Take a 3 to 4 lb bottom round roast
 
2. Cut off all the fat

3. Using a knife, make many slits in the meat (20-30 slits)

4. Use 1 clove of garlic per pound of meat. Cut
off the green tips of the garlic, and slice the garlic razor thin. Put the thin slices in the slits of the beef.

5. Put the beef in a roasting pan and pour in one 12-ounce can of beer.

6. Add one can of beef broth

7. Take two 16-ounce jars of peppercini peppers. Remove all the stems from the peppers and add them to the pan along with the juice from ONE HALF to ONE FULL JAR of the peppercini peppers. (Eddie chops his peppers, Jim does not.)

8. Cover and cook in oven at 225 degrees for 4-5 hours.

9. Cut a piece of Italian bread lengthwise, cover with the meat and peppers. Add some mozzarella cheese and broil until cheese is melted.

10. Enjoy Fast Eddie's Italian meat
Jim's Penne Alla Vodka
Ingredients:
 
Salt
1 cup finely chopped onion
2 tablespoon garlic-infused oil
1 28-oz can plum tomatoes -or- 3 cups finely chopped fresh tomatoes
2 tablespoons heavy cream
Hot Italian sausage, cut into discs
2 lbs penne noodles
1/2 cup vodka
4 tablespoons butter
Grated Parmesan/Reggiano

Directions:

Boil a large pot of water, lightly salted.  In a large saute pan, fry sausage, set aside and drain on paper towels.  In another pan, add oil, onion, and a little salt. Saute onion until soft and beginning to caramelize, about 10-minutes.  Add tomatoes and their juices, simmer for 15-20-minutes.  Add heavy cream and remove from heat.  Cook penne until al dente, drain and return to cooking pot.  Add vodka, butter and salt to the drained noodles.  Gently mix until butter is melted.  Add tomato mixture and mix until pasta is coated.

To serve, transfer pasta and sauce to a large warmed bowl.  Pass the grated Parmesan for the guests to serve themselves. 

Yield:  8-10 servings.
